It’s Fall, Y’all!

I can’t believe it’s already fall. It seems that it was just yesterday that we were celebrating the warm weather and long summer nights. Now, the leaves have started to turn and fall, the temperatures have dropped (thank goodness!), and so fall begins.

 

Although tomorrow is officially the first day of the season, it has felt perfect all week here in Nashville. I’ve really enjoyed taking in the cooler air and sipping on pumpkin spice lattes (thanks, Starbucks!).

While a new season begins here in the city, so does a new list of personal goals. There’s a lot that I want to accomplish and experience in the next few months, and I am so excited to see if I can achieve them all!

What We Wore: In Downtown Nashville

We took a few hours after our meeting on Monday to enjoy the beautiful scenery our city holds. We can’t wait to share with you our little secret! Soup for a Rainy Day: Wild Rice and Chicken Soup

Recently, I decided to make a pot of soup for a coworker who wasn’t feeling too great. I came across this recipe in my mom’s kitchen a few weeks ago and fell in love with its unique flavor. It consists of simple ingredients that you can easily find in your local market, and the best news is, it’s so easy to make! All you need is a big soup pot or a crock pot, and you are ready to start cooking.

This recipe serves 12 people and only takes a couple of hours to cook!

3 cups of stock (I used 2 cups of vegetable stock and 1 cup of chicken stock)

3 cans of cream of potato soup

1 medium onion chopped

1 box of Uncle Ben’s wild rice (I used an additional packet of seasoning from another box just for extra flavor!)

2 pints of half and half (I used one regular and one fat free)

8 oz American cheese, shredded

2 cans of shredded chicken

Salt & pepper to taste

Curry powder to taste

—-First, you will need to cook the box of rice.Image

— Once the rice has completely cooked, add the rest of the ingredients together and cook for 3 hours in the crock pot. Then, dinner is served!

I think soup is best when you’re sick or cuddled up with a good book on a rainy day. I hope you get the chance to try this recipe and find it tasty too!
